I Heart Faces - Pouting

This weeks entry for kids is pouting, ok he is really screaming more than pouting, but I couldn't resist, I think it is a great photo of him. It all started with a pout.

No he was not hurt during the making of this photo, it was a temper tantrum, he did not want to leave the park. He got over it quickly.

Lemony Goodness!

The little ones and I made these tonight, they were quite delicious.
Easy Lemon Cookies
adapted from All Recipes

INGREDIENTS
· 1 (18.25 ounce) package lemon cake mix
· 2 eggs
· 1/3 cup vegetable oil
· zest and juice of one entire large lemon (this originally called for 1 tsp lemon zest)
· 1/3 cup confectioners' sugar for decoration


DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Pour cake mix into a large bowl. Stir in eggs, oil, and lemon juice and zest until well blended. Drop teaspoonfuls of dough into a bowl of confectioners' sugar. Roll them around until they're lightly covered. Once sugared, put them on a greased cookie sheet. (this part didn't work out so well for us, the dough was much too loose for rolling in powered sugar. We sprinkled them with powdered sugar before baking.)
Bake for 6 to 9 minutes in the preheated oven. The bottoms will be light brown, and the insides chewy.

On a Roll w/Cowgirl Eggs

Since becoming a stay at home mom I have come to the realization that cleaning and laundry is not really my gig so I cook instead. I love try new recipes especially bread recipes. I find it quite relaxing, the kneading part that is. I found this recipe on TasteSpotting. It has become a favorite of the family and is requested a lot, they are truly YUMMY! These rolls also serve as great buns for sliders and are good for several days.
French Bread Rolls

French Bread Rolls
adapted from My Kitchen Cafe

1 1/2 cups warm water (110 degrees F/45 degrees C)
1 tablespoon active dry yeast
2 tablespoons white sugar
2 tablespoons vegetable oil
1 teaspoon salt
4 cups all-purpose flour

In a large bowl, stir together warm water, yeast, and sugar. Let stand until creamy, about 10 minutes.

To the yeast mixture, add the oil, salt, and 2 cups flour. Stir in the remaining flour, 1/2 cup at a time, until the dough has pulled away from the sides of the bowl. Turn out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, place the dough in the bowl, and turn to coat. Cover with a damp cloth, and let rise in a warm place until doubled in volume, about 1 hour.

Deflate the dough, and turn it out onto a lightly floured surface. Divide the dough into 12-14 equal pieces, and form into round balls. Place on lightly greased baking sheets at least 2 inches apart. Cover the rolls with a damp cloth (or greased saran wrap), and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).

Bake for 12-13 minutes in the preheated oven, or until golden brown.


Cowgirl Eggs
Now on to Cowgirl Eggs. My granny (and yes that is what we called her) made these for me throughout my child hood. She was a good ole country girl.
Now back in the day when she would fix them for us, they were certainly not called Cowgirl Eggs, they were always called Cowboy Eggs.
When I made them for The Princess the first time, she was not hip on them being boy eggs, so she renamed them Cowgirl Eggs, because a princess cannot eat Cowboy Eggs.

Cowgirl Eggs or Cowboy Eggs, whichever suits you.

1 piece of bread
1 egg
Lots of butter
Fresh ground pepper to taste
1 good old cast iron skillet

Melt butter in skillet over medium heat. Cut a hole in the bread, we like to use cookie cutters to make different shapes. However this morning we just used a small cup. Place bread in skillet, crack egg into the hole in the bread, cover in fresh ground pepper. Cook to your liking, flip after a few minutes cook some more. Eat and enjoy

Just Beginning

I have this new passion, besides my husband of course. It's photography.


I put it on a different blog, so our family blog doesn't get all muddled up with my questionable photography and when I say "questionable" I mean the photo quality, not content. Anyway here goes. Here are some more photos I took of the little ones at the park a couple of weeks ago, when it was warm and not snowing 8 inches. Let me know your thoughts, just leave me a comment. Just in case you are wondering I edited most of them in "The GIMP". If you have any tips feel free to leave them. One more thing, most of the photos will be of my kids and food. My two favorite things in the world!
